Coca de recapte (típica del pallars) per a 4 persones

Ingredients:

Per la massa:

·500 gr de farina
·30 gr de mantega o margarina
·25-30 gr de llevat premsat
·un got de vi d'oli
·un got de vi d'aigua tèbia
·sal a gust de cadascú

Per la guarnició, exemple:

·5 Tomates
·2 Cebes
·2 Pebrots vermell/verd
·2 Albergínies
·Arengades/butifarra/pernil serrà

(només cal fer servir la imaginació)

Preparació:

Farem un volcà amb la farina i introduïrem el llevat, la sal, la mantega i l'aigua. Treballarem la massa amb les mans fins que deixi d'enganxar-se al marbre, tot seguit la deixarem reposar tapada amb un drap a temperatura ambient durant unes 3 horetes per tal que fermenti.
Passat aquest temps li afegirem l'oli a la massa fins que sigui absorbit i la massa quedi suau, la tornem a tapar i esperem uns 30 minutets.
Acte seguit estendrem la massa sobre una safata preparada pel forn prèviament enfarinada o forrada amb paper especial per forn. Després col·locarem la guarnició escollida sobre la massa i escalfarem a 180º durant 30 minuts al forn.

Es pot servir tant calenta com freda, tot i que al Pallars acostumem a menjar-la freda, inclús passat un dia.

Notes complementàries:

Pot fer-se servir una yema d'ou en comptes de la mantega.
Per la guarnició ja sabeu que pot ser a gust de cadascú, amb carbassó també queda molt bona.
Si no es fa servir el llevat premsat trigarà més a fermentar la massa. Jo l'he trobat al Mercadona al costat de les mantegues.
